Finally, it turns out decent
I've been trying to bake a chiffon cake (e.g. pandan cake) because I can't buy any here. I'm sure it's not non-existent, perhaps I can get it in very expensive restaurants.
I tried 5 times and it failed. You can see the photos of the failed cakes in my previous posts. Every time it failed, i tried to do something differently the next time. The first 3 times it failed, I think it is because I didn't have the proper tools. I started accumulating my tools, e.g. an electrical hand mixer, a spatula, a measuring jar, a sieve. I didn't even have a weighing scale so everything is by aga-ration. Later, I got a weighing scale, so I could no longer blame the failures on tools.
Baking a chiffon cake is really challenging. It is not like you just follow the recipe, beat everything together and throw it into the oven. I started to read into the science of every step, e.g. why beat the egg white, then add cream of tartare and then add sugar, why not beat everything together all at once?
Finally, on my 6th attempt, I'm getting something close to chiffon cake.
